Bread Potato Rolls ( cutlets ) Recipe

Potato Stuffed Bread Roll - is typically consumed as a starter before main course meal or a appetizer which can be served as side dish or evening snack with cup of Assam  Kadambri Chai. The preparation of stuffing is very simple and needs only mixing up the ingredients like boiled potato, onions, green chilli and coriander leaves with some lip smacking basic spices.

These shahi bread potato rolls are very nice party snack since they keep crispy for long time. These rolls are crunchy outside, tangy-spicy and soft inside. They are best served with green chutney or sauce. You can find the recipe of green chutney here.

Ingredients:
4 bread slice
2 tsp. coriander leaves 
salt - to taste 
2 medium sized boiled potato
1 medium sized chopped onion
1 chopped green chilli 
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/2 tsp garam masala powder
grated ginger
oil - to fry bread rolls

Method:
1. In a big bowl add boiled potatoes along with onions, green chili, ginger, coriander leaves, red chili powder, garam masla powder, coriander powder and salt. Mix all the ingredients well.
2. Now take water in the wide bowl and dip a single bread slice into it just enough, that the bread gets wet and then immediately take it out and with a hand press, drain out the excess water from the bread slice.
3. While still holding the pressed bread slice, place a potato mixture in the center of the slice and let it cover the ball evenly. 
4. Prepare the balls of the remianing bread slices and keep aside.
5. Now heat oil for frying in a heavy bottomed pan, when the oil is enough hot slow down the heat and fry two bread cutlet at a time. Then on medium flame fry them till golden in color from all sides.
6. Take them out on the kitchen paper.
7. Serve hot with green chutney and cup of Tea.

My Notes:
* These bread cutlets taste best when eaten warm or hot otherwise they become soggy.
* Remember to squeeze out all the water from the bread otherwise it will create splatter in the oil.
* Ensure that bread ball is closed from all sides properly. Otherwise the cutlet might break in the oil.
You can give any shape to them - oval, ball or heart shaped.
* You can shallow fry them in a flat tikki form also.
* You can add some veggies like finely chopped carrot, beans, sweet corn in the potato mixture and it's called Vegetable Cutlet.
